Blush Ice Bar + East-West Kitchen, located in the heart of San Diego’s historic Gaslamp Quarter, offers inventive East meets West cuisine & creative cocktails in a modern, come-as-you are atmosphere. We offer a lively bar scene, progressive fare & a dynamic space in which to dine, drink & celebrate.

How It All Began

Taylor Kim and Russ Fukushima grew up in Hawaii and established a lifelong friendship. Their mutual passion for great food and drinks led them on a path to start Blush Ice Bar.

After several years working full-time in the finance and insurance industries and moonlighting as bartender in Seattle, Taylor developed the idea and recipe for the concept’s signature Blush cocktail in 2009. Inspired by the flirtatious atmosphere brought to life in bars, and in search of word that conveyed its slushy beginnings, Taylor decides on the name Blush for the one-of-a-kind cocktail.

Later that year, Taylor joined Russ in San Jose to embark on the adventure of opening Blush. By the fall of 2011, they completed the plan and secured financing for their first restaurant and bar in the newly developed San Pedro Square Market in downtown San Jose. In April 2012, Blush Raw Bar + Lounge opened its doors and began serving up the signature Blush cocktails, nicknamed Blushies, which immediately sparked a cult following.

Encouraged by the success of the first restaurant and the potential for the brand, Taylor and Russ began a search along the California coast to expand the concept. The criteria for new locations was simple: open new restaurants in places where they personally wanted to live and play. By 2014, they had found an ideal spot in San Diego’s historic Gaslamp Quarter and unveiled the second restaurant, renamed Blush Ice Bar, in the summer of 2015.

The duo have plans to continue the adventure and serve up Blushies in markets across the U.S.

Blush Cocktails

Blush Ice Bar was inspired by our namesake Blush cocktails, better known as Blushies. Just as ice is the foundation of a great bar, it is also an integral component of a well-made drink. Built on the base of a craft cocktail, Blushies are topped with a float of our exclusive house-made, frosted fruit ice. The result is something more than the average chilled drink. We invite you try one of our signature Blushies, and then venture out to mix up your own favorite from the endless combination on our Build Your Own Blush menu. For traditionalists, we also offer a full bar with premium spirits, global wines and local craft beers.

EAST-WEST EATS

We use locally-sourced ingredients as the basis for an inventive selection of small plates, mains, buns, salads and sides which blend West and East cuisines. Specialties include fresh and local seafood, such as split and roasted whole crab, sushi and raw items from our oyster bar, and an array of vegetarian dishes made with fresh-picked produce. Dry-aged and smoked meats as well as fermented miso, kimchi and yuzu kosho are made in house. Dishes are served in a playful communal dining format combining family style service and an a la carte steakhouse experience.
